Yummy Soup for the soul!

So it is the end of the last week before the last week of school. Man okay I am ready to graduate. We got our yearbooks today, its sad a whole year of my life has pasted and it was filled with amazing moments and awesome times with friends, but time has gone by so very fast. But a great time to sit back and reflect on my memories. Some Tomato Basil Soup.


It's delicious! I hope lol. It is cooking as I write.

Here are the ingredients and directions Grab a friend cook it up and reflect on the past. <3 

CREAMY TOMATO BISQUE
  • 2 lbs fresh ripe tomatoes, seeded and chopped
  • 1/2 white onion, chopped
  • 2 cloves garlic, minced
  • 1/2 Tbsp Italian seasoning
  • 2 Tbsp olive oil
  • 1 cup vegetable stock
  • 1/4 cup white wine
  • 1/4 cup Half & Half
In a heavy saucepan heat the olive oil over medium low heat.  Saute the onions for about 5-6 minutes until translucent.  Add the garlic and saute for 1 minute more.  Add in the tomatoes and cook on medium low heat for about 5 minutes.  Add the white wine, vegetable stock, and Italian seasoning and stir til combined.  Bring to a boil and then reduce heat and let simmer for 20-30 minutes until the soup has reduced by 1/4-1/3.  Remove from heat and in small batches add the mixture to a blender and blend until smooth.  Return to pot and add the Half & Half off of the heat.  Stir thoroughly.  Serve immediately.

Wa Wa Waaaansday :(

Okay so anyone who didn't catch my lame joke it was supposed to be like crying like waaaa I'm crying lol. School is out soon, and senioritous is prevalent. And I can't wait until summer comes and I graduate. I have a few good new things. 1. I have an A in psychology! :D 2. I got a 4 on a test in English! YESSS!

Okay well here we go Wednesday morning breakfast nice bowl of cheerios lunch a sandwich and dinner bean and cheese burrito :)

I will give you the recipe to the best lunch sandwich of your life ready? its for you sugar lovers

Items of need.
2 slices of wheat bread
peanut butter ( smooth or chunky what ever you like)
and Marshmallow Cream

Directions to do.
take one slice and smother it in peanut butter
take the other slice and squish em together and enjoy! :)

Day2 a fewdays late

I feel so bad! I didnt blog Tuesday night, man okay well its time to play catch up....

I had a softball game I had to go to, as a part of cheer. And we get team meal for all the baseball or softball games we go to and we got mc Donalds. Bleh! I don't eat mc Donalds as it is, but i sat there and watched my fellow cheer sisters indulge in cheese burgers and chicken nuggets. I turned to fries, salty and greasy. They covered my grumbling tummy. About half way through eating them a gust of wind came and bam my fries were sprawled out around my flip-flops. Fail! That morning I had a bowl of cheerios. I didn't eat much. For lunch I had a half of a peanut butter sandwich. And for dinner I had scrambled eggs and a potato and broccoli. I know weird dinner.
I felt alone in this quest for healthy eating. I watched my family enjoy my mom's delicious BBQ chicken. It looked so good. This is getting hard. And it's only the second day. *sigh*
Oh well. I am ready to so this. All the way no cop outs no half doing it. That means in the next couple of days I will eat fish and tofu. Yikes! I am excited nervous and a little nervous thinking about it. Lol

Day One : Ravioli Bananzaa

Well Today is Day number 1. And suprisingly it was easier than I thought.  But that is only because I had three meals to plan for. I am sure as time goes on, it will get more challenging and I am sure I will be forced to try new foods, oh! Like tofu, I am not sure I want to try it, but eventually I probably will try it. Any good recipes for it?
Haha Well here is how today went.
Breakfast - scrambled eggs and wheat toast with strawberry jelly and a cup of milk
Lunch - Cheese Raviolis from Lean Cuizine
Dinner - Garden Ravioli Dish with Broccoli
This Dish was incredible. I want to share it with you.
Items needed - 20 Spinach Raviolis
4 Tbsp. Parmesan Cheese (shredded)
2 Romaine Tomatos (diced)
1/4 Red Onion (diced)
2 Tbsp. of fresh basil (finely chopped)
2 garlic cloves (minced)
4 Tbsp. Olive Oil

Directions - Boil 4000 mL (or 16 cups) of water in a deep pan. Once the water boils add your raviolis. Cook for 8 - 10 minutes stir often.
During the 8-10 minutes take a large mixing bowl and add in other Cheese the Tomatos the Onions the Basil the Garlic and the Oil and mix them together.
Once the raviolis are done, drain them and get all the water out. Mix them into the bowl with the rest of the items and grub down! :) they are delicious.

Desert - 1/3 of a red velvet cup cake

SO here we go on my thoughts it was easier than I thought. I did it! I drank 2.4 Liters of water. and then some!
I am satisfied I am not hungry I don't want any food, I am good :)

Vegetarian

After reviewing my eating habits, and looking at the foods I was putting into my body, and expecting to keep a nice figure, I realized it was time for a change. This change will be a test of not only self determination, but also discipline. Will I have the strength to walk away from junk food during lunch, that soda or Starbucks when I am out and about. Will I be able to drink the 2.4 Liters of water daily and eat vegetables and ugh fruit. (Just an FYI, I hate fruit.) I am going to try, from now until May 25, 2011, I will be a vegetarian, I will cut back on sweets and Carbohydrates I will not drink anything but water, and 100% Fruit smoothies. 

I am doing this to see if I have enough self discipline to be able to change my eating habits. Thankfully, I am not doing this alone. I have my wonderful boyfriend doing this with me. I created this blog to document my thoughts, feelings and to share recipes who knows, maybe if someone reads this, what I have to say might help them, if it does, then this who thing was worth it. :) I will be documenting daily on how I feel, what I think, what foods I crave and what foods seem repulsive, in the end, I hope that this will help create healthy eating habits that will last a life time. 

I have 17 days to try and create a healthy menu for me. Food that will satisfy my biological needs as well as keep me physically in shape. 

I start tomorrow morning. 

Here is entry number 1: 
My feelings/thoughts - Well to be honest I am a little nervous, I hate fruit, I hate tofu, I hate fish, and I have most eggs. I know, I have gotten a lot of well good luck with that comments, but as stubborn as I am, I will prove to my self I can do this. 

Foods I crave - As of right now, I just want water, I feel so stuffed from Mother's Day dinner with my family, I feel like if you poked me in the stomach I could burst. So nothing but water. 

Repulsive food - Absolutly any thing that causes me to chew and swallow, Anythign think or creamy. Blehh My stomach hurts just thinking about food.
